This year, just like every year, we all get overwhelmed with Panama’s excessive traffic and last minute shoppers.  Sometimes, we’re the culprit of the same procrastination.  This year, luckily, with a little extra effort, we as a family have been able to get a jump on things and got decorations done weeks ago as well as most of our shopping.  Admittedly, the queen is on the road as I type this, looking for a few more gifts for some nephews and a friend she ran into recently.  But that being said, we’re in full Christmas cheer and everyone at the Mikkelson household is excited for the holidays.  With just one last-minute request from Brandon to ensure we have sweet potatoes added to our Christmas dinner, I’ll make a stop this afternoon to Riba Smith for supplies and I’m doooooone.  And, we may actually have time for fishing this weekend as well.  Won’t that be awesome!?

THE TRUE STORY OF THE ORIGIN OF CHRISTMAS

Was Jesus born on December 25? Millions of Christians celebrate Christmas on this day, but the truth is that in the Bible – and specifically the Gospels, which is where episodes of his life are narrated – there is no mention of a specific date of his birth.

In fact, the early Christian communities did not even celebrate the birth of Jesus. To trace the mentions of this festival we must go back only to the fourth century after Christ (from the year 300 to 400).

Historians have accurate information that, at that time, at the time when the Roman Empire was officially converting to the Christian religion, both those who believed in Jesus and pagans – who believed in multiple gods – had celebrations on the same day: December 25.

Why Christmas is starting to be celebrated

At that time, Christians “begin to discuss the origin and humanity of Jesus, and then it begins to be important not only to celebrate death and crucifixion, but also birth,” Lorena Pérez Yarza, professor of History of Religions at Carlos III University and a postdoctoral researcher, told CNN.

In the context of this dispute, in the Middle Ages Armenians and Syrians “accuse Catholics and Orthodox that they are copying a pagan holiday, that they are not celebrating the true day of Jesus’ birth,” Perez explained.

And that is why in the nineteenth century historians thought that the choice of December 25 to celebrate Christmas had originally arisen from a pagan holiday of the Romans. But that hypothesis, at bottom, is the result of a dispute between Christians who could not agree, Perez explained. And the truth is that, although it is a simplified answer, today experts still do not have 100% certainty in their answer to the question.

But what will the pagans celebrate on those dates?

At that time there were multiple pagan festivals, including the Saturnalia, in honor of Saturn, which was one of the most popular in the Roman Empire. However, the end of that celebration dedicated to the god of agriculture and crops was December 23.

During that holiday, as the Encyclopedia Britannica explains, “all work and business were suspended. Slaves had temporary freedom to say and do as they pleased, and certain moral restrictions were eased.” And also during that celebration, Pérez explained, gifts were given, a tradition that continued in Christian Christmas.

On the 25th, meanwhile, there was an important celebration dedicated to solar worship, a cult that “gained popularity at the end of the Roman Empire as a way of praising the emperor,” according to the professor. This celebration of Sol Invictus was of great majesty, with public festivals at the Roman Cirque and races.

The truth is that the symbols of this cult of the emperor and the Christian cult were generated in the same culture and the influences are notorious. An example is the haloes of the saints, which come from the solar cult, as well as the crowns of medieval kings and allusions to light that exist in Christian symbology.

TOYS HAVE A GUARANTEE: KNOW WHAT THE LAW CONTEMPLATES

Did you know that every toy that is purchased in the Republic of Panama has a legal guarantee of three months?

Law 45 of October 31, 2007, establishes this, as reported by the Authority for Consumer Protection and Defense of Competition (Acodeco) through a statement on December 22, 2022, which also states that, although the guarantee is not indicated on the invoice, the consumer can demand it under said law.

In addition, it clarifies that, if during this time deficiencies occur in the article, the consumer can demand repair, replacement and ultimately reimbursement of the amount paid.

He adds that all toys must maintain their respective price in view of  buyers, so Acodeco verifies that the scanners record the prices of the packaging or on the shelves.

The entity recommends that before choosing a toy they should make sure that it is intended for the age of the child and are not dangerous.

In this sense, they indicate that, harmless toys for an age of eleven can be dangerous and even deadly for a 4-year-old child. Although technological items are in the first place of preference, it must be considered that the appropriate age is very important.

He explains that, once the desired toy has been found, the person should check if it has in a visible place the indications that allow identifying its origin and if there is a minimum age for its use. Check your status, and if you have the slightest doubt about the security you provide for your child, do not buy it.

In addition, they advise you to carefully read the instructions for use and additional observations (regarding assembly, protective equipment, precautions, etc.). Keep the useful data of the manufacturer or distributor, and the invoice, in case you have to make a claim.

Recommendations

Explain to the child the detailed operation of the toy, as described in the instructions, you can even make a first test in his presence, to check that the child has understood your explanation. Indicate any risks you may run and tell them what gestures or manipulations to avoid.

– If you buy electric toys, check that they do not represent risks, such as burns.

– Painted or varnished toys are not suitable for young children, because they take everything to their mouths.

– Baby toys must be made of unbreakable materials.

– Beware of toys that produce noises, as they can easily leave the child deaf, especially if they are used in a closed room, as the sound multiplies.

They clarify that the prices of toys have never been regulated, they are governed by free supply and demand. The law requires that prices are in view of the consumer and that they are complied with.

ETESA AND MUPA WILL RECEIVE NATURAL CHRISTMAS TREES TO TRANSFORM THEM INTO COMPOST

The compost or fertilizer can be reused in gardens, said Etesa.

The Electric Transmission Company (Etesa) and the Municipality of Panama (MUPA) will receive on January 7 and 8, 2023 natural trees to transform them into compost or fertilizer, for those who wish and can reuse it in their garden.

With this activity, which will be held in the parking lots of Etesa’s headquarters, Plaza Sun Tower in the Ricardo J. Alfaro, it seeks to contribute to the recycling and sustainability process of the country.

According to Etesa, recycling deposit centers have been established in five of its offices, for the collection of materials such as cardboard, paper, metals, tetrapak containers, plastics and glass, in order to take care of the environment.

“As a result of these saving and recycling actions in the month of November, significant savings of more than 6,544 liters of water were achieved, along with energy savings of more than 1,849,000 kilowatts per hour, with a direct benefit for our forests, lakes and citizens in general,” said Etesa.

In this sense, a series of actions are recommended for a better disposal of waste during these end of the year holidays:

  • Deliver gifts in reusable bags.
  • Use reusable cutlery and plates.
  • Use decoration with Christmas lights disconnect at the end of the workday, and in the case of homes, do it before going to sleep.
  • Use or donate toys that are still in condition.
  • Use Christmas trees as fertilizer for your home plants

MINSA RECOMMENDATIONS TO AVOID EMERGENCIES IN DECEMBER HOLIDAYS

Minsa recommendations to avoid accidents in December.

The Ministry of Health (Minsa), asks the population not to lower their guard regarding the measures and rules of self-care established by the authorities, in this month of December in which multiple activities are carried out.

Among the recommendations it makes to the population to avoid accidents are:

• Do not buy fireworks

• Prohibit children from using gunpowder games on sharp objects that can scrape and cause skin lesions.

• Do not allow children to launch fireworks

What can you do if an accident occurs?

• Make sure your home has plenty of water in case an accident happens that can cause burns.

• Seek medical attention immediately.

• Pour plenty of cold water into the injured area.

• In case of burns in the eyes, do not rub or rinse with water, It may cause more damage.

• Do not press your eyes.

Tips for dealing with a burn

• Clear the area of injury of clothing, earrings, bracelets, rings, and other items.

• In case there is fabric or any garment adhered to the skin, it should not be detached from it.

• If blisters are created, do not burst them for any reason.

• Do not put any substance on the burn. Do not cover the lesion, it is better to leave it uncovered so that it dries and heals better.

• Go immediately to the nearest Health Center or call 911 do not let time pass.

How to avoid burns at home?

• Use the back burners.

• Leave pans and pots with magicians back.

• If you feel constant smell of gas, better call the firefighters.

• Test the water temperature before bathing children.

CSS WILL DECLARE GREEN ALERT DURING CHRISTMAS AND NEW YEAR TO REINFORCE EMERGENCY MANAGEMENT

For emergencies there will be 453 officials: 200 paramedics, emergency operators, and 40 SSC ambulances on the move.

The Social Security Fund (CSS) will declare a green alert from December 24 to 27 and from December 31 to January 2, to reinforce health care during these end of the year holidays.

On these dates, 32 executing units will continue to be served, of which 12 are hospitals, 20 polyclinics and a ULAPS.

Likewise, 5,000 CSS officials will be activated, including laboratory workers and doctors, as well as blood banks.

For emergencies there will be 453 staff: 200 paramedics, emergency operators, and 40 ambulances on the move.

According to Eynar Cruz, head of Emergency Management, the most common cases at this time are trauma from falls, fights due to alcohol intake and cases of burns due to fireworks.

Cruz announced that assaults by firearms and knives have decreased by 50%.

The Ramírez family for more than 60 years has strived to make a birth of Jesus with pieces that transport to Bethlehem

Mr. Carlos Ramírez explains that, although for this year the trade of births has been very limited, he has gone out to the streets and to the different shops to look for the necessary elements to fulfill his tradition.

Sisters Ana and Cecilia Conte travel to the Holy Land to bring moving pieces, where the images tell the entire biblical landscape and detail that they are pieces that have been inherited from generation to generation.

The sisters confess that for them to do the birth in this way is a passion, where the most important thing is to be able to transmit to the children the importance of the birth of the child God.

DECEMBER 23 CHRISTMAS ACTIVITIES

Free Christmas activities.

Artistic presentations, parades and plays are some of the Christmas activities that we will have this December 23 in Panama. Below, the list with the places and time when the events will take place.

At 8:00 a.m.

From 8 a.m to 6:00 p.m the La Doña Shopping Center, will have its ‘Magic Christmas Festival’ where they will have bazaars with artisanal products of entrepreneurs.

At 10:00 a.m.

Los Niños Cantores de Panamá and the Teachers’ String Quartet will give a concert at the Tocumen Airport. In the artistic presentation, Christmas carols will be sung and a special show will be given to travelers who are in the waiting room of the Airport, at that time of the morning.

At 4:00 p.m.

In the Chapel San Martin de Porres, the Grapes of San Carlos, the Christmas concert will be held by the Fc Grupo Musical. Christmas carols will be sung and they will have many other surprises.

At 5:00 p.m.

In the Rufina Alfaro Park the ‘Christmas Walk’ will be held, the event will have special entertainment for children, followed by a Christmas parade through the main streets of Villa de los Santos.

At 7:00 p.m

In Alcance Victoria Panama, there will be the play ‘A True Christmas’ where the whole truth will be told by the Grinch. This will be a night for the whole family and totally free.

WHAT SAFETY MEASURES SHOULD YOU TAKE IF YOU TRAVEL INDOORS FOR CHRISTMAS?

During the long weekend for the Christmas celebrations, a great mobilization is expected towards the interior of the country, where many families will spend the holidays.

SECURITY MEASURES FOR CHRISTMAS SHOPPING IN PANAMA

Security measures before Christmas shopping in Panama.

Among the Christmas purchases in Panama, amounts of cash are usually handled in the country’s shopping centers. To this, security outside our home must be preserved, to avoid being victims of robberies and thefts.

For this reason, the Public Ministry (MP) announces the security measures to be taken in the face of the risks of crimes on the streets and alerts while you are alone.

  • When leaving home, try to close the doors and windows to avoid theft.
  • To withdraw cash from ATMs, be accompanied, avoid dark places and do not count money in public.

TIPS TO AVOID FOOD CONTAMINATION AND POISONING

Cases of food poisoning increase.

With the arrival of the end of the year holidays and the consumption of unusual foods, the cases of poisoning that arrive in the emergency rooms of hospitals increase.

This is due, among other things, to the poor handling of food when preparing them such as salad, which should not be exposed to heat for a long time, especially if it was made with mayonnaise, so they recommend refrigerating it and adding mayonnaise minutes before consuming it.

The nutritionist José Ramiro López, pointed out that many foods are prepared from noon or afternoon hours, to be consumed at midnight or at night, allowing the growth of bacteria, therefore, it is best to take them to the fridge.

Meanwhile, the Social Security Fund (CSS) has issued a green alert in all hospitals nationwide for this December 24, 25, 31 and January 1, in order to be able to attend any type of emergency that is registered, including poisoning by food, alcoholic beverages and burns.

Hanukkah: Are they days off for the Jewish community?

It’s not free for Panamanians this week because of Hanukkah. Starting with the fact that this is a celebration of the Jewish community, which is not adopted by our country.  Some Jews take these days as a rest, to fully enjoy the celebration, while others continue with their common workday. This is according to the culture of the family, but it is not obligatory not to work for Jews, because of Hanukkah.

Hanukkah, Jewish holiday: how is it celebrated?

Hanukkah is celebrated by lighting candles for 8 nights in a row.

There are 8 days and nights of celebration which are commemorated by lighting a candle according to the days. The first day begins with one, the second lights two and so on until completing the number of candles that go on the Hanukiya (the sailboat) that tends to be put in the windows, with the luminaires already lit as a tradition; thus demonstrating to the world that thousands of years ago a miracle occurred.

Apart from this lighting of lights families tend to play with the Sevivon, this is a traditional game that is done between adults and children. The Sevivon is a style of a four-sided spinning top, where each face has the initial letter of a word.

  • N: nes means miracle.
  • G: gadol means big.
  • A: aya means there was.
  • Sh: sham there in that place.

The whole sentence would say: There was a great miracle in that place.

Some Jewish families also celebrate Hanukkah, giving a gift every night, until the 8 days are completed. This is to share with family and friends, it is not a requirement of the date, but some households have adopted it to make the celebration something enjoyable for children.

Another way to share the also known Festival of Lights, is to make large banquets where you tend to cook dishes such as Latkes (grated potato pancakes), Sufganiya (donut type), and eat all kinds of menu that is made with oil, since this is a symbolism of the oil that multiplied for the Maccabees in that cave thousands of years ago.

Holiday Recipes

Over the years, I’ve been the one to take care of most of the main courses and desserts for our Christmas dinners.  Taking after my mother, I always make it a point to over do it… …waaaaaay over.  This year was no exception and I ended up making my classic Pumpkin Pies, (6 of them), a Cherry Pie, 2 Pineapple Upside down cakes, and an assortment of over 150 cookies.  A few of my friends and party goers asked me if the recipes were secrets, for which they are not.  Therefore, what better “END NOTE” could I come up with other than a few of the better recipes that I’ve come upon over the years.  My biggest hit this year, by far, was the Pineapple Upside Down Cake.  They really need to come up with a shorter name for this one, but “PUD Cake” sounds kinda nasty.

This Pineapple Upside Down Cake is the BEST recipe I’ve made and tried! The cake itself is moist, soft and tender with a fresh pineapple flavor, and the topping consists of caramelized pineapples and maraschino cherries for ample flavor!

Ingredients

  • FOR THE TOPPING:
  • 1/4 cup salted butter melted
  • 1/2 cup brown sugar
  • 5-7 pineapple rings drained and juice reserved
  • Maraschino cherries without stems
  • FOR THE CAKE:
  • 3 Tbsp vegetable oil
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1⅓ cups all-purpose flour
  • 1/4 cup full-fat sour cream or Greek yogurt
  • 1/2 cup milk
  • 1/4 cup pineapple juice

Instructions

  1. Preheat your oven to 350 degrees F. Lightly grease the bottom and sides of a 9″ round cake pan with cooking spray. In a small bowl, combine the melted butter and brown sugar and pour the mixture into the bottom of the cake pan, spreading it out evenly. Arrange the pineapple rings around the pan and place maraschino cherries in between. Set aside briefly.
  2. In the bowl of a stand mixer, cream together the oil and granulated sugar until moistened. Beat in the egg, salt, baking powder, and vanilla until combined. Beat in the sour cream. Gradually add some of the milk, alternating with the flour until a soft batter comes together. Gently beat in the pineapple juice last.  Veeeeery imporant to do this just prior to pouring the batter… …next step.  Don’t add it just to let it set for a few minutes.  The acidic juice will eventually separate the batter and then, well, yuck.
  3. Carefully pour the batter over the pineapples in the pan, careful not to disturb their placement. Bake for approx. 40-45 minutes or until the cake appears set, is light golden brown, and a toothpick inserted near the center comes out clean or with moist, not wet, crumbs.  Cool for 10-15 minutes, then very carefully invert the cake onto a platter or plate. If you use the proper pan for this, the cake will slide right out.  Serve warm or room temperature.

IMPORTANT NOTE:  I doubled this recipe and put it all in a 9×13 cake pan, instead of the 9” round and it worked out perfectly.  Cooking times were much longer though.

CHRISTMAS COOKIES

Ingredients

  • ▢ 225g / 1 cup unsalted butter , softened (or use salted, skip salt)
  • ▢ 1 cup caster/superfine sugar (granulated/ordinary white sugar ok too)
  • ▢ 1 1/2 tsp vanilla extract
  • ▢ 1 large egg (55-60g / 1.9-2oz)
  • ▢ 3 cups flour , plain / all purpose
  • ▢ 3/4 tsp baking powder
  • ▢ 3/4 tsp salt

Instructions

  1. Preheat Oven to 180°C / 350°F (160°C fan). Line 2 baking sheets with parchment paper.
  2. Beat butter and sugar in a large bowl until creamy (1 minute on speed 5)
  3. Add egg and vanilla, beat until completely combined.
  4. Add flour, baking powder, and salt.
  5. Start mixing slowly, then beat until the flour is incorporated – it will be clumpy.
  6. Dust work surface with flour, scrape dough out of bowl. Pat together then cut in half, then shape into 2 discs.
  7. Roll out to 0.3cm / 1/8″ (for thinner, crispier cookies) or 0.6cm / 1/4″ (for thicker, softer cookies), sprinkling with flour under and over the dough so it doesn’t stick.
  8. Use cookie cutters to press out shapes and use a knife or spatula to transfer shapes to prepared baking sheets. (Keep dough that doesn’t fit in the oven in the fridge).
  9. Bake for 10 minutes, swapping trays halfway (Note 2), until the surface is pale golden and the edges are just beginning to turn light golden.
  10. Allow cookies to cool completely on trays (they will finish cooking on the trays).
  11. Icing
  12. Melt chocolate then dip the surface into chocolate.
  13. Dot with icing sugar and decorated with silver balls
  14. Dust with icing sugar
  15. Serve plain! They are sweet vanilla biscuits so they are wonderful eaten just as they are!

PEANUT BUTTER BLOSSOMS

Ingredients

Yield: 5 dozen cookies

  • 1¾cups all-purpose flour
  • 1teaspoon baking soda
  • ½teaspoon salt
  • 4ounces (1 stick) butter, at room temperature
  • ½cup smooth peanut butter (or other creamy nut butter)
  • ½cup granulated sugar, plus more for rolling
  • ½cup light brown sugar
  • 1large egg
  • 1tablespoon milk, half-and-half, oat milk or nut milk
  • 1teaspoon vanilla extract
  • Nonstick spray or vegetable oil for cookie sheet (optional)
  • 5dozen (one 11-ounce package) Hershey’s Kisses, foil removed

Preparation

  1. Step 1

Sift together flour, baking soda and salt; set aside. Using an electric mixer, cream together butter, peanut butter, ½ cup granulated sugar and light brown sugar. Add egg, milk and vanilla; beat until well blended. Gradually add flour mixture, mixing thoroughly. If the dough is very soft, refrigerate for about 1 hour.

  • Step 2

Preheat oven to 375 degrees. Spray, oil or line a cookie sheet with nonstick liner and set aside. Roll dough into 1-inch balls. (For a precise number of cookies, divide the dough into 5 pieces, and shape each piece into 12 balls.)

  • Step 3

Roll cookies in sugar and place 2 inches apart on cookie sheet. Bake until very light brown and puffed, 6 to 8 minutes. Remove sheet from oven and lightly press a candy kiss into center of each cookie, allowing it to crack slightly. Return to oven until light golden brown, 2 to 3 minutes. Remove from oven, cool completely and store in an airtight container.

SNICKERDOODLES

Ingredients

  • 3 cups (375g) all-purpose flour (spoon & leveled)
  • 2 teaspoons cream of tartar*
  • 1 teaspoon baking soda
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup (2 sticks or 230g) unsalted butter, softened to room temperature
  • 1 and 1/3 cup (267g) granulated sugar
  • 1 large egg + 1 large egg yolk, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1/3 cup (70g) granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Line two large cookie sheets with parchment paper or silicone baking mats. Set aside.
  2. Make the topping: Combine the granulated sugar and cinnamon together in a small bowl.
  3. Make the cookies: Whisk the flour, cream of tartar, baking soda, cinnamon, and salt together in a medium bowl.
  4. In a large bowl using a hand mixer or stand mixer fitted with a paddle attachment, beat the butter and granulated sugar together on high speed until smooth and creamy, about 2 minutes. Add the egg, egg yolk, and vanilla extract. Beat on medium-high speed until combined. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. With the mixer running on low speed, slowly add the dry ingredients to the wet ingredients in 3 different parts. The dough will be thick.
  5. Roll cookie dough into balls, about 1.5 Tablespoons of cookie dough each. Roll the dough balls in cinnamon-sugar topping. Sprinkle extra cinnamon-sugar on top if desired. Arrange 3 inches apart on the baking sheets.
  6. Bake cookies for 10 minutes. The cookies will be very puffy and soft. When they are still very warm, lightly press down on them with the back of a spoon or fork to help flatten them out. Allow cookies to cool on the baking sheet for 10 minutes and transfer to a wire rack to cool completely.
  7. Cookies remain soft & fresh for 7 days in an airtight container at room temperature.
